For those who are not aware, Lebkuchen is a spicy, German, gingerbread, Christmas snack. And since it’s ONLY 18 weeks until Christmas, we thought we might as well get into the festive spirit early.

The ingredients are as follows…

1 egg
1/2 cup brown sugar
1/2 cup honey
1/2 cup molasses
3 cups all-purpose flour
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon baking soda

For icing:
225g icing sugar
3 tablespoons water
1/2 teaspoon food colouring (we chose pink)
lots and lots and lots of sprinkles

The drinks were poured, the Bowling for Soup CD was inserted (I know, I’m sorry) and the oven was preheated to 350 degrees F (175 degrees C).
But what’s with all this cup business?

We were not sure what kind of cup to use, so we used this one, wonderfully modelled by Franski…

Start by mixing the egg, brown sugar, honey and molasses until smooth (what we called "The Wet Mixture")

Secondly mix the flour, cinnamon, nutmeg, cloves, allspice and baking soda together (what we called (guess what) "The Dry Mixture")

Then mix my pimping childs!!! Mix until it turns into dough! Mwa ha ha ha!

The mixture shouldn’t really look like this…

we did it a bit odd and it went a bit crumbly and wouldn’t stick together that well.

We made some smaller pimped things before making the pimped daddy,
a gingerbread man shaped into the form of Franski’s boss, a love-heart for pimping comparison and a well.. lebcocken.

When we have purchased lebkuchen in the past it has been shaped in stars, hearts, moons, rocking horses and bells. We went for the simple heart shaped.

Although now, I wish we had done a rocking horse…

Now then, it says on the recipe that you have to leave the cookies in for 10-12 minutes, but I checked it several times and it wasn’t done until after 25 minutes.

While that was being cooked we made the icing. We made it far far too runny though, it didn’t really matter because the icing on lebkuchen is usually very thin anyway.

pop it in the fridge for…. a while…

Et voila! One scrumptious Christmas snack!
