Pimp That Snack

After Eight

Ingredients:

400g dark chocolate (good quality, 73% cocoa) (£3.40 from Waitrose)
50g unsalted butter (£0.99 from Waitrose)
1 teaspoon expensive peppermint extract (£8 a bottle from waitrose)
1/2 cup corn syrup (cheap imported kind from an oriental supermarket)
3 cups icing sugar (not sure since I bought it previous to this project)

Very pimped up ingredients especially the posh peppermint extract!

Peppermint extract, English butter, corn syrup, icing sugar and four bars of dark chocolate on the worktop

Using a recipe for homemade creme eggs, I mixed up a large batch of white,
minty goo.

Pale mint fondant beaten in a metal bowl, thick ribbons falling from the spatula

White goo spread around liberally

White mint fondant spread with a palette knife over the set chocolate base in a lined tray

Chocolate covering the white goo before being refridgerated again.

Melted dark chocolate poured across the white mint filling in a cling-film lined tray

A comparison:

The finished chocolate square on a wooden board next to one normal After Eight mint.

Cut edge of the giant mint revealing a thin white peppermint layer inside the chocolate

Now I just need to keep it around for a small dinner party.
