Step 1. Make up the shortbread mix, flour, butter and sugar in the mixer and mix till nice and shortbready.
Step 2. Shape in to two disc shapes and punch a hole in the top one and scribe some detailing lines on the top piece as well.
Step 3. Cook for 45 mins then spread on the cream and fill the whole with jam then sprinkle on some sugar.
