What can one say about a burrito that’s nearly a foot and a half long? It was the best burrito I’ve ever eaten. It was the most burrito I’ve ever eaten. It was fantastic.
Step 1:
The Tortilla: put all the ingredients together. Make an oven sized tortilla. Dry fry this in a clean pan (or as in our case, on a cookie sheet over the stove.)
Step 2:
Prepare the beans. We cooked them, then fried and crushed them. Add "healthy" amounts of garlic & olive oil.
Step 3:
Chop the salsa ingredients (excluding the liquids) and combine in a bowl. Make much more than you require, because you will consume approximately 20% of what you make prior to completion of the burrito.
Step 4:
Cook the mince in a pan with the burrito seasoning and plenty of garlic.
Step 5:
Assemble ingredients in the tortilla. Ours was too stuffed to stay closed on its own, so we weighted it closed with a pan. Put it in the oven for about five minutes, be careful of any spillage out the ends.
Step 6:
Remove from the oven. Add guacamole, sour cream, lettuce. Gorge yourself.
