It started as a dream. A vision. Sure we were mocked endlessly for our imagination but that didn’t detour us.

But low and behold, presenting to the world our "Pimped Out" Peek Frean Fruit Crème monster!!!!

Butter and sugar in a stand mixer bowl, then beaten pale and fluffy

It all starts off with a little butter and sugar.

Hands bringing the crumbly biscuit dough together in a large steel mixing bowl

Next it’s time to get a little dirty!

Dough rolled flat on a floured counter, then discs stamped out with a round cutter

A rolling we will go. 18 circles were needed to create the top of the cookie.

Cut dough discs and cutter on the counter while a golden retriever waits on the floor

EVERYONE STOP!!! DOG IN THE ZONE!! DOG IN THE ZONE!!

Dough discs overlapped in a ring inside a round tin, shown raw and then baked

Phew, moving on. Cookie top before, Cookie top after. Letting the cookie cool gave us the luxury of watching some wonderful Sunday afternoon reality shows on TV. Wow, can those crews dance.

Flat disc of raw dough pressed into a large round tin, string stretched across it

Back to work! Next comes the bottom of said cookie.

Small dough logs rolled by hand, then laid side by side around the tin's edge

After an hour and a half of rolling little dough lines we wanted to kill the cookie.

Original biscuit held beside the giant dough, its floral pattern copied in piped dough

Such precise detail is what professional pimps do!

Patterned dough lid with P.F. lettering in the tin, before and after baking

Cookie bottom before, cookie bottom after. Letting the cookie cool allowed us time to watch part of the movie The Holiday. Gotta love that Kate Winslet!

Buttercream filling beaten in the stand mixer with icing sugar added from the bag

1, 2, 3 flip! We both died a little inside when all that hard work was face down for here on out.

Baked patterned top held up in both hands, and the plain baked base on its board

Now lets mix up some buttercream!

Buttercream piped over the base, then the patterned top lowered onto it

Spread it on thick!

Side view of the layers: biscuit base, deep cream filling, patterned lid, beaded edge

Close up!

Red jam being spooned from a bowl into the round well in the biscuit top

Now, in goes the jam!

A little bit of sugar makes her complete!

TA-DA! OUR PIMPED OUT PEEK FREAN!
