Crunchy Nut Cornflake

My flatmate, Gaz, and I have lived together for 2 years at uni. Everyone knows we are Crunchy Nutters. After a large one on the town, a mate challenged us to Pimp our flake. They said it couldn’t be done. Well up yours Babs, here it is. It wasn’t perfect, but we got there in the end.

Ingredients: Extras:

2 Packs Popcorn Maize 2 Eggs
1 Bottle Clear Honey Flour
1 Pack Almond Nuts
1 500g Pack Brown Sugar
1 500g Pack White Granulated Sugar
Kitchen Foil (20m)

First up, boil 2 packs maize for 3 hrs to soften.

Roll and squash the softened maize to break skin before going in to mixture.

Measure out 200g brown and 200g granulated white sugar with tablespoon of water. Add honey to mixing bowl while whisking.

Add squashed maize and whisk into mix. We learnt from previous mistakes that at this point you need 2 egg whites and handful of flour to help bind the mixture.

After we smelt the burning from our electric whisk, we realised it was struggling to cope and got our hands in. Or Gaz got his in, as you can see.

Mix should thicken to something like dough. Transfer this to baking parchment on oven tray.

Then roll it out, to required size and shape.

Slice almonds, which we used because they are bigger than peanuts. Place on flake. Add honey on top to get the honey glaze.

Then cross your fingers and whack it into preheated oven (200C) and cook for 50 minutes or until golden brown.
