In the last couple of days I’ve had a load of really great suggestions for eating cheaply and healthily using basic ingredients. A lot of it is news to me but I’ll be putting it to good use next week.
In the meantime I haven’t been shopping and I’m draining what little remains of the food in the house. By the time July 1st rolls around I’m going to be near-starving and desperate for something, anything, to eat. I’m looking forward to my first shop

Here’s a recipe that should be cheap enough, tasty and filling:
RICE WITH BAKED BEANS AND SALSA:
2 cups of cooked rice (brown is better for you)
1/4 cup salsa (more if desired / affordable)
1x tin of baked beans
1x cup grated cheese
(+ tortilla chips if you fancy a little bit extra but depends on your budget)
Mix all ingredients together in a microwave safe dish/bowl and heat in the microwave for about 2 to 3 minutes, or until heated through. Serve with tortilla chips, or on a plate as a meal with a salad.
